Pecan Pie

Ingredients
- 3 large eggs
- 1/2 cup sugar (~ 100g)
- 1 cup maple syrup (~340g)
- 3 tablespoons butter, melted (~ 42g)
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 cups pecan halves (~ 200 g)
Dough
- Combine 1-1/4 cups (~ 150g) all-purpose flour and 1/4 tsp. salt; cut in 1/2 cup cold butter (~ 115g) until crumbly. Gradually add 3-5 Tbsp. ice water, tossing with a fork until dough holds together when pressed. Shape into a disk; wrap and refrigerate 1 hour.
Directions
- Preheat oven to 190°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling.
- In a bowl, whisk eggs and sugar until smooth. Add maple syrup, butter, vanilla, salt and pecans. Pour into crust.
- Bake until a knife inserted in the center comes out clean, 30-40 minutes.
