Fried Rice

Ingredients
- 2 cups cooked white rice (day old)
- frozen peas
- eggs
- Onion chopped
- carrot julienne
- 2 scallions, sliced
- 2 garlic gloves, minced
- soy sauce
- sesame oil
- Vegetable oil
- salt
Directions
- Heat oil, add half of the rice, stirring/tossing until the rice is pale brown and toasted, chewy texture, about 3 minutes. Repeat with second half. Remove
- Heat oil, add carrots, then onions, garlic, scallions, add rice to combine, add soy sauce and sesame oil, season with salt/pepper.
- Push rice to side, add eggs, toss eggs and rice together
